Mmmm jalapeno poppers…

Just a quick note. About a month ago I tried a recipe for jalapeno poppers. It was bland and awful. I recently acquired some fresh, organic jalapenos. So, I gave it a second try. But this time I made it with a great mix of spices and a few other ingredients(which I like to call the goodness). I have to say they are delicious. I will remake it soon so I can share the recipe and pics. Hold your breath, the recipe will be here soon!

Don’t forget the pizza..

Wow! I can’t believe that I forgot to tell you about the PIZZA. I got in from work several nights ago, craving homemade pizza. NC Man and I hit the local grocery and stocked up on the best italian meats and cheeses. The base of the pizza was a simple pre-made eight inch round crust. Then the homemade sauce. We started with organic tomato paste. We added fresh basil, fresh tomatoes, oregano, sea salt, fresh ground pepper, dried parsley, onions, green peppers, and red peppers. This heavenly mixture simmered for about an hour while we prepared all of our ingredients. We were also enjoying one of our favorite Italian beverages, Peroni. I think a little of it made it into the sauce also. Once the sauce was spread, we covered the pizzas with pepperoni, pancetta, salami, mozarrella, parmesan, and the veggies. I made all of my pizzas with the veggies on top of the cheese. NC Man put the cheese on top. They are equally delicious. I just think everything on top is more artistic and pretty. We each made three varieties and they all we wonderful. It was a fantastic night.

The next day we used all the leftover meats, cheese, veggies, and herbs to make panninis. Yeah, it was an all italian weekend. And it was FUN!


Yep, that’s me after a hard day of gardening. Man, that was a great sandwich.


The bounties of summer

I just LOVE fresh garden veggies in the summer. A huge zucchini came my way at work and at the same time our summer squash was ripening. The recipe just came to me. It is simple, colorful and delicious. Feel free to use any veggies that you like, but make sure you try it this way. Yum!

Summer’s Bounty

1 clove of fresh garlic


Summer squash

black pepper to taste

Mediterranean sea salt to taste

Mozzarella, Parmesan, or any other Italian cheese

1. In a large skillet, mix 1 tbsp. olive oil, 1 tbsp. butter, and chopped garlic clove.

2. Cook over med-low heat for about 2 minutes.

3. Throw in chopped zucchini and summer squash.

4. Salt and pepper well.

5. Saute for 10-15 minutes until soft. Do not over cook.

6. Cover with cheese and serve.


Simple, healthy, and mouth-watering.

Sorry, I have been M.I.A.

We have had a very busy past six weeks. I haven’t had much time for updating the blog. NC Man and I have been in North Carolina  three times over the six weeks. Whew! I am wore out from all the driving. I have some new recipes and pics that I will get on here soon. Please be patient.
