Yum Yum Chicken

This recipe was an inspiration after checking out a recipe for a curry chicken. I have never been a fan of curry, so I used the cooking method with my own spices. It turned out great.

You will need big honking chunks of chicken. Split breasts, quarters or regular breasts will be fine. Potatoes, onions, garlic and carrots round out this one pot wonder. I used a Chicken Grilling Seasoning but feel free to use your favorite chicken spices. This grilling seasoning is organic and can be found at any natural food store.

Drizzle olive oil all over the chicken then sprinkle liberally with spices. Seer the chicken on both sides. This is a very important step. It will give the chicken a beautiful color and add lots of flavor.

Remove the chicken from the pan and add cubed potatoes, baby carrots, garlic and onions. I used pearl onions in the pictures, but any onion will work. Then add about 3/4 cup of chicken broth. Return the chicken to the top of the mix and let simmer for about 30 minutes or until the veggies are fork tender. I always check my meat with a meat thermometer. I would suggest getting one if you do not already have one. They are fairly cheap and can be found at most grocery stores.misc 005

That is about it. Easy peasy and all in one pot. Who could ask for more?

 The following recipe serves two. Adjust accordingly.


Yum Yum Chicken

2 large split chicken breasts
olive oil
2 large potatoes
3/4 cup baby carrots
3/4 cup onion
2 large garlic cloves
3/4 cup chicken broth
chicken grill seasoning

1. Heat a large pan to med-high. Add about 1 tsp. olive oil.

2. Drizzle olive oil over chicken and sprinkle liberally with seasoning.

3. Sear chicken on both sides. About 2 minutes per side or until golden brown.

4. Remove chicken from pan and add potatoes, carrots, onion and garlic.

5. Add chicken broth and lower temperature to med.

6. Add chicken back into pot and simmer with lid on for approximately 30 minutes or until chicken and veggies are cooked through.

7. Serve and enjoy!

Tortilla Pizza

This is my favorite snack. It is quick, easy and oh so yummy. I saw someone make pizza with tortillas on TV and got the idea to make it bar-b-q pizza. The first time I made it, I used some left over chicken(diced finely). Add whatever you like! It is a fun and easy recipe. Get the whole family involved.


Tortilla Pizza

Flour Tortillas

Bar-b-q sauce

Shredded cheese

Diced onion


Preheat oven to 350 degrees. Place tortilla on a non-stick cookie sheet. Spread a thin layer of sauce, about 1 tsp. over the tortilla (I use a mixture of Stubb’s and Sweet Baby Ray’s).

Layer with cheese and veggies of your choice. Make sure to dice the veggies fine.

Bake for approximately 5 minutes. Keep a close eye on the pizzas, they can burn fast.

Now, just cut it like a pizza and pass it around.
