Tortilla Pizza

This is my favorite snack. It is quick, easy and oh so yummy. I saw someone make pizza with tortillas on TV and got the idea to make it bar-b-q pizza. The first time I made it, I used some left over chicken(diced finely). Add whatever you like! It is a fun and easy recipe. Get the whole family involved.


Tortilla Pizza

Flour Tortillas

Bar-b-q sauce

Shredded cheese

Diced onion


Preheat oven to 350 degrees. Place tortilla on a non-stick cookie sheet. Spread a thin layer of sauce, about 1 tsp. over the tortilla (I use a mixture of Stubb’s and Sweet Baby Ray’s).

Layer with cheese and veggies of your choice. Make sure to dice the veggies fine.

Bake for approximately 5 minutes. Keep a close eye on the pizzas, they can burn fast.

Now, just cut it like a pizza and pass it around.

This is not a test…

So, NC Man yelled for me then went running into the kitchen and grabbed tongs. “You won’t believe this!” I followed him back to the bathroom, thinking there was a creature in the bathroom. We are in the south afterall. You never know what will get into the house.

 Oh, there was a creature alright. Right there in the toilet. About 8 inches long and made of plastic!

How does such a thing happen, you may ask? Honestly, I have no idea! But the toothbrush was removed with a sergeons gentle touch. Note the kitchen tongs! Yeah, gross, I know. (they will be thoroughly disinfected!!! the tongs, I mean!)

Just too funny! I had to share. Well, looks like I am off to the store to buy more toothbrushes.

St. Patrick’s Day Pub Crawl

It all started at Dixie’s Tavern where we signed in and got our t-shirts, beads, and schedule.


We left ahead of schedule to beat the crowd. The Alley Cat seemed more like a dance club but it was fun until the crowd showed up.


Next was Buckhead Salon to watch the UNC game.


After the game, we went to Phil’s. We had a lot of fun yelling at the crowd through the big front window.

At this point we were getting hungry and walked over to Rockbottom. It is a great restaurant and micro-brewery. I had the best fish tacos ever(and I know my fish tacos).

After lunch, we went to Brick & Barrel and had a dance party with a group of girls. The music was from the 80’s which made it time to pull out the retro dance moves.

We left B&B and headed over to Whiskey River where we all rode the bull. Poor bull only had one horn.

What did you serve for the BIG Game?

We had a few friends over and decided to do a wing cook off.  We started off with Tasty Onion Rings  with the Southwest Dipping Sauce. Then it was on to the wings. I made The Best Wings Ever The other wings were delicious also, but needless to say,  I won the cook off. Thank you Stubb’s! 

We also had Becki’s Pickles(if you all leave comments, then I might give you the recipe), NC Style BBQ pulled pork sandwiches, Rotel cheese dip, and Twinkie Cake(another one of Becki’s fabulous recipes). I swear I gained 10 pounds that day.

And I forgot to mention the homemade waffles, bacon, and sausage links that we had for breakfast. I can officially say that I am sick of eating. We will be eating salads and veggies all week after that binge.

home-004This is our view from the deck. The woods are not very deep and there is a really nice neigborhood behind us. I am guessing that once the trees bloom, we won’t be able to see the neighbors at all.

I am really pleased with the way the house has come together. Our two sets of furniture have meshed well to make a lovely home. I can’t wait for you to come see it. You might want to wait until this cold weather breaks, though. That way you can truly enjoy the NC weather.

I will try to get a recipe up soon.

Master Bedroom

Simple, elegant style. You really can’t tell much from the pictures, but it is very pretty. We haven’t decided what to hang above the bed.
