A few things….

I have not been very active with my blog lately. A lot has been going on(see previous post). I can’t help but wonder, why I continue blogging.  I do have a bunch to say, but can’t quite finds the words to say it all. As I sit and ponder where I am in life and where I want to be, I am not sure where blogging fits into the scope of things. Please don’t take me wrong, I am not just giving up and quitting(not anytime soon anyway).  Hopefully, once I get some other things in my life straightened out, blogging will fall into place.

In the mean time, here are some pics from our BIG backyard project.

This is how it started. Just a typical back yard. The only features were the greenhouse and small vegetable garden.

The first mini-project. We used tree limbs and old 4×4 posts for the edging. Lillies  inside.

The new rain barrel catches plenty of water for the plants.

The yard was all tilled and posts holes dug.

The fence completed and the bones of the arbor put  into place.

All done! Yay!!! Now for the planting and weeding and fertilizing and…..

As promised…

The bench on the deck after the big snow storm. The temperature got up to the mid 40’s yesterday so the snow on the bench melted.

Mia is not so pleased with the new camera. She gets annoyed being the subject of so many pictures.

Zeke doesn’t seem to mind being my muse.

Well, maybe he does mind a little. But on rare occasions, I can get him to pose for multiple pictures.

I’m A Slacker

Okay, so consider me a slacker. I have had alot going on in the past few days! My ma just had a hip replacement and I have spent the last 2 days at the hospital. She comes home tomorrow and hopefully I will find time for new posts!


Please don’t forget about Breast Cancer Awareness Month! It is so important for every woman to be checked!


A little side note…… I will be in an Art Show in Greensboro, NC on Nov. 6 and will be taking all of the Garden Girl Creations shop with me. If there is anything that you have your eye on, now is the time to purchase it. It may not be available after the 6th. Thanks for all of the support!

tuesday teaspoonSorry about not posting a Friday Find last Friday. NC man and I decided at the last minute to head to Pisgah on Thursday and I didn’t have time to get the post up. I guess it makes this weeks Teaspoon an apology and not an informative post. Anyway, we spent 4 days in the forest and had a fantastic time. I will put up some of the pictures tomorrow for Wordless Wednesday. Hope everyone had a great weekend!

Yum Yum Chicken

This recipe was an inspiration after checking out a recipe for a curry chicken. I have never been a fan of curry, so I used the cooking method with my own spices. It turned out great.

You will need big honking chunks of chicken. Split breasts, quarters or regular breasts will be fine. Potatoes, onions, garlic and carrots round out this one pot wonder. I used a Chicken Grilling Seasoning but feel free to use your favorite chicken spices. This grilling seasoning is organic and can be found at any natural food store.

Drizzle olive oil all over the chicken then sprinkle liberally with spices. Seer the chicken on both sides. This is a very important step. It will give the chicken a beautiful color and add lots of flavor.

Remove the chicken from the pan and add cubed potatoes, baby carrots, garlic and onions. I used pearl onions in the pictures, but any onion will work. Then add about 3/4 cup of chicken broth. Return the chicken to the top of the mix and let simmer for about 30 minutes or until the veggies are fork tender. I always check my meat with a meat thermometer. I would suggest getting one if you do not already have one. They are fairly cheap and can be found at most grocery stores.misc 005

That is about it. Easy peasy and all in one pot. Who could ask for more?

 The following recipe serves two. Adjust accordingly.


Yum Yum Chicken

2 large split chicken breasts
olive oil
2 large potatoes
3/4 cup baby carrots
3/4 cup onion
2 large garlic cloves
3/4 cup chicken broth
chicken grill seasoning

1. Heat a large pan to med-high. Add about 1 tsp. olive oil.

2. Drizzle olive oil over chicken and sprinkle liberally with seasoning.

3. Sear chicken on both sides. About 2 minutes per side or until golden brown.

4. Remove chicken from pan and add potatoes, carrots, onion and garlic.

5. Add chicken broth and lower temperature to med.

6. Add chicken back into pot and simmer with lid on for approximately 30 minutes or until chicken and veggies are cooked through.

7. Serve and enjoy!
